Using fed-batch fermentation in high-gravity brewing: effects of nutritional supplementation on yeast fermentation performance

چکیده
To intensify the brewing process and increase the fermenter productivity, many breweries throughout the world have been embracing high-gravity brewing. However, increasing original wort concentration can cause a negative effect on yeast fermentation performance. This study focused on the application of fed-batch fermentation in high-gravity brewing. High gravity worts of 24oBx (using 30% high maltose syrup adjunct) supplemented with yeast extract or mixture of yeast extract and Tween 80 were used as feeding-media in fed-batch cultures. As a results, the nutrients supplemented to feeding media improved the yeast fermentation performance. Especially, the supplementation of 0.25% (w/v) yeast extract and 0.8% (v/v) Tween 80 to the feeding-medium not only reduced the primary fermentation time, but also increased the ethanol concentration of the fed-batch culture in comparison with the fed-batch culture without this supplementation to the feedingmedium.

: In very high gravity brewing, fed-batch fermentation was carried out with Saccharomyces cerevisiae immobilized in calcium alginate gel. The specific gravity of initial wort and feeding medium originated from 55% malt and 45% maltose syrup adjunct was adjusted to 28oBrix and 41oBx, respectively. The effect of supplementation of mixture of Tween 80 and ergosterol to the initial wort or to the f...

Modeling of fermentation processes is so complicated and uncertain; therefore it is necessary to provide a robust and appropriate dynamic optimization method. In order to obtain the maximum amount of yeast (Saccharomyces cerevisiae), the bioreactor must be operated under optimal conditions. To determine substrate feeding in a fed-batch bioreactor, a simulated annealing (SA) approach was examine...

Obtaining different batches of beer with the same characteristics each time is a continuous challenge for brewers worldwide. Besides the complexity and natural variation of ingredients ́ composition, reusing the same batch of yeast up to 7-10 times makes the brewing process even more difficult to control. The pitching brewing yeast should have a high metabolic activity in order to meet the expec...

One of the promising methods to improve yeast fermentation performance in high gravity brewing is to increase pitching rate in the bioreactor. In this study, fermentation with four different pitching rates (1.5×107, 4.5×107, 7.5×107, and 10.5×107 viable cells/ml wort) was carried out to investigate the impact of pitching rate on yeast fermentation performance and beer quality from 24oBx wort.
